Rosé days are just around the corner. With troubling times swirling all around, a carefree glass of liquid sunshine is a great way to take off the pressure and, for a moment to two, sip splendidly into summertime.

The delicate colour in rosé comes from the skins of red grapes. The longer the skins are left macerating with the juice, the darker the colour of the wine. If you press the grapes and allow the skins to have just a few short hours with the juice, you get pale rosé, such as MIP 2019 (12.5%) £14.95, one of my favourite pinks from Provence via Lea & Sandeman. 

Winemakers also use the ‘saignée’ method, bleeding off a little wine at the beginning of the process of making a red. Some also blend red and white wine together to make rosé, most commonly in the Champagne region, using a splash or two of red to enrich their fine pink fizz. 

Whatever the method, the results will have you feeling in the pink – as soon as the sun comes out.
