A personal trainer who once worked with Angelina Jolie has shared the simple recipe for his healthy crispy sweet potato fries.

In an Instagram post to his 95,500 followers, Luke Hines, 37, revealed he makes the delicious dish using tapioca flour instead of duck fat, which makes the fries healthy, but still means they have a delicious crunch as soon as you bite in.   

The Byron Bay nutritionist, who provided training and dietary advice on the set of Angelina’s blockbuster Unbroken while she was filming in Australia in 2013, said the fries are gluten and dairy-free, as well as plant-based.

To make them, you need just a few standard supermarket ingredients including two large sweet potatoes, extra Virgin olive oil, coriander, parsley leaves, lime and avocado.

You’ll also need to buy either tapioca flour or arrowroot flour, both of which provide the crunch without the added fat. 

‘Here’s the recipe for my crispy sweet potato friies with chilli lime avocado and how I get crispy fries every time,’ Luke posted.

You’ll need around 40 minutes all up to cook and prepare the dish.

How to make Luke Hines’s sweet potato fries with avocado and lime 

INGREDIENTS

For the sweet potato fries

Two large sweet potatoes (about 800g)

40g (1/3 cup) arrowroot or tapioca flour

One teaspoon sea salt

Two tablespoons of extra Virgin olive oil

Two tablespoons of coriander or flat leaf parsley leaves

One lime, cut into cheeks, to serve

For the chunky diced lime and chilli shepard avocado 

Two shepard avocado, diced

Zest and juice of one lime

One tablespoon of apple cider vinegar

One teaspoon chilli flakes

½ teaspoon of sea salt

METHOD

1. Pre-heat the oven to 220 degrees Celsius and line two baking trays with baking paper. 

2. Cut the sweet potatoes into evenly-sized matchsticks, about five millimetres thick.

3. Place in a bowl or sealable bag, add the arrowroot or tapioca flour and salt and toss or shake to coat evenly. Drizzle over the extra Virgin olive oil and toss or shake again.

4. Arrange the sweet potato matchsticks in a single layer over the prepared trays, leaving space between them.

5. Bake for 15 minutes, then flip with a spatula and cook for a further 10-15 minutes, or until the fries are crispy and starting to turn golden brown in spots.

6. Meanwhile, to make the chunky diced lime and chilli Shepard avocado, gently toss all the ingredients in a bowl until well-combined, keeping the avocado ‘nice and chunky’.

7. Pile the sweet potato fries onto a large platter and top with generous servings of the lime and chilli Shepard avocado, sprinkle over the coriander leaves, season well with salt and serve with the lime cheeks for squeezing.

Luke also said Shepard avocados are better than Hass in this instance, because ‘with their firmer flesh that will hold its form and won’t brown when sliced, Shepards will give you perfectly green cubes of avo every time’.
