Lina runs the Lebanese Plate Instagram page and website – and loves cooking
Lina, who cooks under the name ‘The Lebanese Plate’ on Instagram, starts by toasting the pine nuts in oil before removing them and setting them aside.
She then uses the same pot to sauté the garlic.
She adds the cherry tomatoes and cooks them until soft before adding her pasta.
This can be any kind of pre-cooked pasta but she chose to use gnocchi.
‘Add your homemade pesto, salt pepper to taste, cooking cream, pasta cooking water, toasted pine nuts and chilli flakes. Mix to combine gently,’ she said.
She removes the pot from the heat before tossing in the bocconcini. The Parmesan is added to serve.
