An Australian foodie who’s known for sharing delicious food recipes on TikTok has revealed her sweet potato toast breakfast recipe.

Ayeh made the breakfast dish by stacking smashed avocado, rocket leaves and grilled haloumi onto a sweet potato slice.

She balanced the flavours by adding a teaspoon of honey, lemon juice and chili flakes.

‘It’s the perfect combo of sweet and salty in every bite,’ she said in the video posted on May 6.

Ayeh began by slicing the sweet potato lengthways and cooking the pieces in the oven for 12 minutes

The popular TikTok user has more than 615,000 followers and the video itself has received over 235,000 views in four days.

To make the unique meal she first sliced one huge sweet potato lengthways to form thick slices.

The potato toast was placed on a tray with baking paper and cooked for 12 minutes until soft.

As the slices were cooking, Ayeh fried chopped haloumi pieces on the stovetop until golden brown and smashed the avocado.

HOW TO MAKE SWEET POATATO TOAST:

Ingredients:

  • Smashed avocado
  • Rocket
  • Haloumi
  • Honey
  • Sweet potato
  • Lemon juice
  • Chili flakes (optional)

Method:

Slice the sweet potato lengthways into thick slices and cook in the oven for 12 minutes or until soft

Smash the avocado and season with salt 

Chop and fry the haloumi in a pan on the stove until brown

Assemble the toast with the avocado first followed by the rocket and haloumi 

Add a drizzle of honey and lemon juice on top as well as the chili flakes if desired 

Season to taste
